As soon as the rainy season sets in, the craving for something spicy, tangy and comforting begins. Especially when there’s a cool breeze and light showers, indulging in a hot, flavourful non-vegetarian dish adds a whole new level of satisfaction.

While the market offers many varieties of chicken, it’s not always possible to eat out. In such moments, preparing something special at home like Ginger Chicken Masala can be a perfect idea. This dish is spicy, aromatic and satisfying and best of all, it’s easy to make.

Ingredients For Ginger Chicken Masala

  • 4 chicken leg pieces
  • 100 grams finely chopped onion
  • 4 teaspoons grated coconut
  • 2 teaspoons finely chopped ginger
  • 2 curry leaves
  • 1 teaspoon fennel seeds
  • 1 teaspoon red chilli powder
  • 3 teaspoons cumin seeds
  • 2 teaspoons black pepper
  • 100 ml refined oil
  • Salt to taste

Easy Cooking Method

  • In a mixer jar, combine black pepper, cumin seeds, fennel seeds and grated coconut.
  • Add a little water and grind into a fine paste.
  • Heat oil in a pan over medium flame.
  • Add chopped onions and saute until light pink.
  • Add curry leaves and ginger, and cook for a minute.
  • Mix in red chilli powder and salt.
  • Add the chicken pieces along with the prepared spice paste.
  • Pour in 750-800 ml of water, stir well and cover the pan.
  • Cook on low heat until the chicken is fully done and the spices are well absorbed.
  • Once the gravy thickens and oil separates on top, your Ginger Chicken Masala is ready.

How To Serve

Garnish with fresh coriander leaves and serve hot with rice, roti or paratha. It also makes a great addition to dinner parties or weekend meals, bringing a burst of flavour to your everyday cooking.
